Easy Tater Tot Casserole Recipe

We love a good breakfast casserole here on the ranch, and this one is on regular rotation because it’s a favorite with my boys and so hearty and filling. I also love making it for holidays since it’s easy to throw together, turns out beautifully, and uses just a few simple ingredients while delivering bold, delicious flavor. The best part? It reheats wonderfully, making it perfect for leftovers and easy breakfasts all week long.

What Ingredients Are in Breakfast Tater Tot Casserole?

  • Breakfast Sausage – We raise our own pork and use our delicious homegrown sausage, but any breakfast sausage will do here.
  • Extra Crispy Tater Tots – I like to use these Ore-Ida extra crispy tater tots. They have a great flavor and don’t go soggy in the casserole.
  • Eggs
  • Whole Milk
  • Medium Shredded Cheddar Cheese
  • Crumbled Bacon – This is optional, but if you like a little extra meat, you can top this casserole with some crumbled bacon and it’s amazing.

Easy Tater Tot Breakfast Casserole

  1. Preheat the oven to 375°F.
  2. In a large frying pan, cook the pork sausage over medium heat until fully cooked, breaking it up as it cooks. Remove from heat, drain any excess grease, and set aside.
  3. In a medium bowl, whisk together the eggs, milk and salt and pepper until well combined.
  4. Lightly spray a 9×13-inch baking dish with cooking spray. Spread the tater tots evenly across the bottom of the dish.
  5. Evenly layer the cooked sausage over the tater tots. Pour the egg mixture over the top, then sprinkle evenly with shredded cheese.
  6. Cover the dish with aluminum foil and bake for 35–40 minutes. Remove the foil and continue baking for an additional 5–10 minutes, or until the casserole is golden brown and bubbly.
  7. Serve warm and enjoy!

Storage and Reheating

Storage:
Allow the breakfast tater tot casserole to cool completely. Cover the baking dish tightly with foil or transfer leftovers to an airtight container and store in the refrigerator for up to 4 days.

Reheating:
Reheat individual portions in the microwave for 30–60 seconds, or until warmed through. For larger portions, reheat in a 350°F oven covered with foil until heated through, removing the foil for the last few minutes if you’d like the tater tots to crisp back up.
