Easy Shepard’s Pie

I have a confession to make: I’ve never liked traditional Shepherd’s Pie. For some reason, the soft layer of mashed potatoes on top just doesn’t do it for me. I’ve tried to love it, but the texture always throws me off. So, I decided to do a little experimenting and swap out the mashed potatoes — and I have to say, this version completely changed my mind. Now, I absolutely love Shepherd’s Pie.

This recipe is easy, flavorful, and unlike any other Shepherd’s Pie you’ve had before. Instead of mashed potatoes, it’s topped with crispy southern-style fried potatoes and a layer of melty cheese, giving it the perfect balance of texture and comfort. It’s hearty, satisfying, and a little more approachable for picky eaters. If you’ve never been a fan of the traditional version, this twist might just win you over too.

What Ingredients Are in Shepard’s Pie?

  • Ground Beef – As always, we use our own homegrown ground beef that is grass-finished and regeneratively raised. It’s delicious, lean and so good. Our ground beef is 90/10 and I never have to drain off a bunch of fat.
  • Southern Style Potatoes – These southern-style potatoes are a total game changer. I fry them until they’re perfectly golden and crispy on the outside, while still tender on the inside. When layered on top of the casserole, they add the most incredible texture and bring everything together in the best way.
  • Frozen Mixed Vegetables – Most of the time, I just use frozen peas and carrots, but when I have a bag of mixed vegetables, that works too.
  • Beef broth – By using beef broth to make a gravy, it adds so much flavor to this Shepard’s pie.
  • Flour
  • Worcestershire Sauce – I use Worcestershire sauce often to enhance the flavor of ground beef.
  • Shredded Cheddar Cheese – The top layer is a crispy blanket of golden potatoes finished with perfectly melted cheese — and it truly makes the dish. For the richest, creamiest melt, I always recommend buying a block of cheese and shredding it by hand. Pre-shredded cheese just doesn’t melt the same way, so trust me on this one — freshly shredded makes all the difference.

Best Shepard’s Pie Recipe

  1. Preheat the oven to 400°F.
  2. In a large skillet, heat a few tablespoons of oil over medium-high heat. Add the potatoes and cook until golden brown and crispy. Remove from the pan and set aside.
  3. In a separate skillet, combine the ground beef, seasonings, and Worcestershire sauce. Cook over medium heat until the beef is fully browned and cooked through.
  4. Reduce the heat to medium-low, sprinkle the flour over the beef mixture, and stir until well incorporated.
  5. Slowly pour in the beef broth, stirring frequently, and let simmer until a thick gravy forms. Remove from heat.
  6. Lightly spray a 9×13-inch baking dish with cooking spray.
  7. Spread half of the crispy potatoes evenly across the bottom.
  8. Layer the frozen vegetables over the potatoes, then spoon the beef mixture on top.
  9. Sprinkle with shredded cheddar cheese, and finish with the remaining crispy potatoes.
  10. Bake for 15–20 minutes, or until the top is golden brown and heated through.
  11. Remove from the oven and let cool slightly before serving.

Gluten Free Shepard’s Pie

This recipe can easily be made to be gluten free! Here’s how:

First, make sure that all your ingredients are indeed gluten free. Everything in this recipe should be gluten free except for the noodles, but I always caution to double check and make sure your ingredients are gluten free.

Second, you will want to choose a gluten free flour. I love the Cup4Cup Gluten Free Flour.

Storage and Freezing

Storage:
Allow the Shepherd’s Pie 2.0 to cool completely, then cover tightly or transfer to an airtight container. Store in the refrigerator for up to 4 days.

Reheating:
Reheat individual portions in the microwave in 60-second intervals until warmed through. For best texture, reheat in a 350°F oven for 15–20 minutes (or until heated through) to help re-crisp the potatoes on top.

Freezer-Friendly Instructions:
To freeze, let the casserole cool completely. Wrap the entire dish tightly in plastic wrap and then aluminum foil, or transfer to a freezer-safe container. Freeze for up to 3 months.

To reheat from frozen, thaw overnight in the refrigerator. Bake at 350°F for 25–35 minutes, or until heated through. If baking directly from frozen, cover with foil and bake for 45–60 minutes, removing the foil during the last 10–15 minutes to allow the top to crisp up.
