This slow cooker creamy taco soup is one of the easiest recipes out there, yet packs in loads of flavor in each bite. It’s also loved by picky eaters and kids who complain about every meal. This soup is made with simple pantry staples like ground beef, beans, tomatoes, taco seasoning, and a creamy finish that brings everything together. Just brown the meat, add everything to the slow cooker, and let it do the work—an easy, no-fuss recipe that’s perfect for busy days when you need dinner to practically make itself.

What Ingredients Are in Slow Cooker Creamy Taco Soup?
- Ground Beef – I use our delicious grass-finished beef that we raise. (You can find that here.) It’s incredibly nutrient dense and so flavorful. Our ground beef is a lean blend of 90/10. You can use any type of ground beef that you would like.
- Diced Tomatoes – This recipe has a lot of flavor but not a lot of spiciness to it. If you want to add a little more spice, you can substitute regular diced tomatoes with fire roasted diced tomatoes.
- Tomato Paste – Tomato paste helps to thicken the soup.
- Black Beans
- Corn
- Beef Broth – Rather than using water, I like to use beef broth in my soup recipes to add some yummy flavor to the base of the soup.
- Shredded Cheddar Cheese – If you have time, shred some cheese by hand. Pre-shredded cheese has a waxy substance on it to prevent it from caking while in the package. It makes it harder for it to melt in dishes. I always, always buy cheese in the bricks and shred it by hand.
- Cream Cheese – Cream cheese is going to add that nice rich, creamy flavor.
- Heavy Whipping Cream – This is going to make everything smooth and enhance the flavors.
- Toppings – Fritos, sour cream, avocados, cilantro, etc…
Seasonings
- Taco Seasoning – (get my homemade taco seasoning recipe here)
- Onion Powder
- Garlic Powder
- Cumin
- Kosher Salt
- Pepper

Creamy Taco Soup Recipe
- In a frying pan, combine ground beef and all seasonings. Cook until ground beef is completely cooked through.
- When done, remove from heat and add ground beef to slow cooker.
- Rinse and drain black beans and add to slow cooker.
- Drain corn and add to slow cooker.
- Add in beef broth, diced tomatoes and tomato paste. Stir until well combined.
- Place the cream cheese on top and cover and cook on low for 4 hours.
- After 4 hours, remove cover and add in heavy whipping cream.
- Stir all ingredients together until well mixed.
- Serve with favorite toppings.

Gluten Free Slow Cooker Creamy Taco Soup
This slow cooker taco soup is gluten free! I do, however, always caution to make sure that the ingredients that YOU are using are indeed gluten free. One thing to take into consideration is that taco seasoning is not gluten free. Therefore, you will need to find a gluten free taco seasoning, or you can use my homemade taco seasoning recipe found here.
Storage and Freezing
Storage: Allow the soup to cool completely, then transfer to an airtight container and store in the refrigerator for up to 4 days. The flavors continue to develop as it sits, making leftovers even better the next day.
Freezer: This soup freezes well. Let it cool completely, then store in freezer-safe containers or bags for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheating: Reheat on the stovetop over medium-low heat or in the microwave, stirring occasionally until warmed through. Add a splash of broth or milk if the soup has thickened.

Ingredients
- 1 lb. ground beef lean, 90/10
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp cumin
- ½ tsp pepper
- 1 ½ tbsp taco seasoning
- 15 oz. black beans, drained and rinsed
- 15 oz. corn, drained
- 14.5 oz. beef broth
- 2 (14.5 oz.) cans diced tomatoes
- 2 tbsp tomato paste
- 8 oz. cream cheese
- ½ cup heavy whipping cream
Toppings
- Tortilla strips
- Shredded cheddar cheese
- Sour cream
- Diced avocado or guacamole
- Chopped cilantro
- Sliced green onions
- Jalapeños
- Pico de gallo
- Tortilla chips on the side
Instructions
- In a frying pan, combine ground beef and all seasonings. Cook until ground beef is completely cooked through.
