So, this is my husband’s all time FAVORITE dip ever. He will request it at every holiday, every party, and any gathering. I honestly don’t blame him because this slow cooker queso dip is amazing. It’s also incredibly easy to make, so I’m good with it.
This queso dip has 3 simple ingredients. Yes only 3 ingredients! Velveeta cheese, pork sausage, and Rotel tomatoes. It seems like it should be more, I know. But when you put these ingredients together in the slow cooker, magic happens.

What Ingredients Are in Slow Cooker Queso Dip?
- Pork Sausage – I like to use regular pork sausage so that it’s not too spicy for my kids. However, my husband loves when I use Italian pork sausage for a little extra kick. Either works! Our favorite brand to use is the Jimmy Dean pork sausage, but you can use whatever brand you would like.
- Velveeta Cheese – Don’t come at me, I know this cheese looks gross, but it makes the best queso dip.
- Rotel Tomatoes – Rotel tomatoes have both tomatoes and green chilis, so it has great flavor.

Easy Slow Cooker Queso Dip
- In a frying pan, cook the sausage over medium heat until fully cooked. Remove from the heat and drain any excess grease.
- Add the cooked sausage to the slow cooker.
- Cut the Velveeta cheese into small cubes and add it to the slow cooker as well.
- Pour the Rotel tomatoes over the sausage and cheese.
- Cover and cook on low for 1–2 hours, stirring frequently to prevent sticking or burning.
- Once the cheese is completely melted and the dip is smooth, it’s ready to serve.
- Serve warm with crackers or tortilla chips. Enjoy!

Storage and Reheating
Storage: Store any leftover queso dip in an airtight container in the refrigerator for up to 3–4 days.
Reheating: Reheat gently in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth and warmed through. You can also reheat on the stovetop over low heat, stirring frequently to prevent burning.
