These no bake chewy granola bars are honestly one of my very favorite treats that I make, and the best part? They’re actually super healthy! They come together in just a few minutes with simple pantry ingredients and no baking required. Each bite is soft, chewy, and perfectly sweetened with honey for a natural touch. You can easily mix in chocolate chips, nuts, or dried fruit to make them your own. Keep a batch in the fridge for a quick breakfast, post-workout snack, or anytime pick-me-up.

What Ingredients are in No Bake Chewy Granola Bars?
- Old-Fashioned Oats or Rolled Oats – I’ve tried a lot of different oats on my quest to make this recipe, and I found that old-fashioned oats are the best. To make this recipe gluten free, keep scrolling to find out how!
- Peanut Butter – I use creamy peanut butter for this. You can definitely use the crunchy peanut butter, but I love the traditional creamy peanut butter.
- Chia Seeds – Chia seeds are a nutrient-dense superfood rich in fiber, omega-3s, and plant-based protein that support digestion, heart health, and lasting energy. I sneak it into these granola bars, and my kids don’t even know they’re in there.
- Honey – Honey brings in that naturally sweetness that is so good. I also love it because it’s a natural sweetener.
- Vanilla – I prefer to use pure vanilla rather than vanilla extract. It has a richer flavor rather than the flavor you get with vanilla extract.
- Mini Semi-Sweet Chocolate Chips – I like to use the mini chocolate chips because I think regular chocolate chips are too big in this recipe.
- Milk Chocolate Chips – I know, more chocolate. I just love chocolate. I like to melt the milk chocolate chips and use it as my base. It makes it so there is a lovely, thin layer of chocolate on the bottom of these granola bars.
- Sea Salt – To balance out all the sweetness, I add a dash of sea salt and it’s so good.

No Bake Chewy Granola Bars Recipe
- Line a baking sheet pan (13″x18″) with parchment paper and set aside.
- Pour the chocolate chips in a microwave-safe bowl and heat in 20–30 second intervals, stirring after each one. Continue until the chocolate is mostly melted, then stir until smooth and glossy—this prevents burning and ensures even melting.
- When the chocolate is melted, pour it onto a baking sheet lined with parchment paper and spread it evenly. Place the pan in the fridge for about 30 minutes, or until the chocolate has hardened.
- In a separate mixing bowl, combine the oats, peanut butter, and honey, stirring until well combined.
- Add in the remaining ingredients and mix until everything is evenly blended.
- Remove the baking sheet from the fridge and pour the granola mixture over the hardened chocolate, pressing it firmly into an even layer.
- Return the pan to the fridge to chill until set.
- Once the granola bars have hardened, cut them into your desired size and enjoy!

Gluten Free No Bake Chewy Granola Bars
This recipe can be adapted to make it gluten free by switching out the old-fashioned oats. Here is what I use to make these granola bars gluten free:

Store these granola bars in an airtight container in the fridge for best results. Because they are a no bake treat, when they come to room temperature, they do get a little soft.
