Slow cooker chicken tortilla soup has got to be one of the best soups there is! Not only is it bursting with flavor, but it’s incredibly fulfilling as well. Our family loves this soup, and I love that it literally takes me 5 minutes to throw together in the morning and then I go about my day. When I come home, I quickly shred the chicken and then prepare all the toppings for the soup. It’s definitely one of the easiest dinners there is.

What Ingredients Are in Chicken Tortilla Soup?
- Chicken – The chicken that I use for this recipe is boneless skinless chicken thighs. My family prefers chicken thighs to chicken breasts for flavor so that is what I used.
- Diced Tomatoes – I use regular diced tomatoes, but if you would like to add a little kick to the soup, you can use diced tomatoes with green chilis. My little friends can’t handle spicy things, so we stick to a milder version of chicken tortilla soup.
- Chicken Stock – This is going to be the base of your soup. Stock has a richer flavor, so I use that rather than chicken broth.
- Corn – To sneak in some vegetables and make this soup heartier, I like to add in corn.
- Black Beans – Black beans pair well with this chicken tortilla soup and give it a little extra protein as well.

Recipe for Slow Cooker Chicken Tortilla Soup
- Pour chicken stock in the bottom of a slow cooker.
- Add in chicken thighs and all seasonings.
- Rinse and drain black beans and add to slow cooker.
- Drain corn and add to slow cooker.
- Cover and cook on low for 6-8 hours.
- After 6-8 hours, remove cover and shred chicken.
- Mix so that all ingredients are well incorporated.
- Serve with desired toppings.

How to Store Slow Cooker Chicken Tortilla Soup
The best part about this recipe, is that it makes great leftovers! Store it in an airtight container in the fridge for up to 5 days. To reheat, spoon desired amount into a bowl and microwave or reheat on the stove in a saucepan.
