Amazing Homemade Chicken Noodle Soup
This homemade chicken noodle soup is made completely from scratch. It sounds intimidating but I promise it’s easier than you think! Made with homemade broth, and egg noodles and loaded with tender carrots, celery, and shredded chicken, this recipe will be your new favorite chicken noodle recipe.
Homemade Chicken Noodle Recipe
Before I started making my own homemade chicken noodle soup, my family absolutely did not like chicken noodle soup. How tragic huh? Chicken noodle soup is a classic! But I totally understood! Some chicken noodle soups are bland and way too salty in my opinion. However, of course, one day my kids got sick and wanted something that was easy on their bellies, so I felt compelled to make a healthier, delicious chicken noodle soup.
After a few tries, I felt like I finally nailed the homemade chicken noodle soup recipe. Now my tiny critics beg for my homemade chicken noodle soup even when they’re not sick!

What Ingredients Are in Homemade Chicken Noodle Soup?
- Shredded Chicken – I like to use a rotisserie chicken for my homemade chicken noodle soup. I use almost every part of the chicken. I pull all the meat off of the chicken and set it aside to add in later. If you have time, when you’re boiling the water and vegetables together, throw in the chicken carcass as well. It adds so much flavor to your broth and nutrients as well! After a few hours of cooking this down, remove the chicken carcass and bones and you have a delicious broth packed full of flavor and nutrients.
- Carrots – I use carrots a few ways in this chicken noodle soup recipe. When I am making my broth, I will add whole carrots to the broth to add flavor. After the broth has simmered for a few hours, I will then remove the whole carrots and then add my soup ingredients. This is when I will add sliced carrots and celery, the shredded chicken and the noodles.
- Celery – As mentioned before, I add in a few whole celery spears with the broth to add flavor. Later, take them out and add in the sliced celery.
- Garlic Cloves – I love to add in a few cloves of garlic to add some extra flavor to the broth. You will also pull these out later on.
- Onion Powder – I love using onion powder. It gives a nice subtle flavor here without being too overpowering.
- Garlic Powder – Even though we add in garlic cloves, I still add in some garlic powder as well.
- Chicken Bouillon – Bouillon cubes are my go-to when I want to add a lot of flavors in soups. They are made up of dehydrated meat, vegetables, salt and other seasonings in this little, tiny square.
- Pepper
- Egg Noodles – I make my own homemade egg noodles that my kids say are the very best part of this soup. You can find that recipe here. If you don’t want to spend the time to make your own egg noodles, you can use prepackages ones.
Tools You’ll Need
Recipe for Homemade Chicken Noodle Soup
- Remove all meat from the rotisserie chicken. Shred the chicken and place in an airtight container and place in the fridge for later. Do not discard the chicken carcass.
- In a large stock pot, add in water, chicken carcass, whole celery, carrots, garlic cloves, and chicken bouillon cubes. Cover and bring to a boil. When the water begins to boil, reduce heat to low and let simmer for 2 hours.
- After 2 hours, remove the chicken carcass and any bones that are in the broth along with the pieces of celery, carrots and garlic cloves and discard.
- Slice the carrots and celery and add to the chicken broth.
- Add 3-4 cups shredded chicken to soup along with onion powder, garlic powder and pepper.
- Turn to medium heat and cook until carrots and celery are soft.
- Add in egg noodles and cook until egg noodles are soft.
- Remove from heat and serve.
- Enjoy!
How to Store Homemade Chicken Noodle Soup.
If there are any leftovers, I will store them in an airtight container in the refrigerator for up to 5 days. To reheat the soup, you can either pop it in the microwave or heat it on the stove. This is my very favorite recipe to take to neighbors and friends who aren’t feeling well. It’s just as good as leftovers!

- 1 rotisserie chicken
- 16 cups water
- 5 whole carrots
- 5 celery spears
- 3 garlic cloves
- 10 chicken bouillon cubes
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp pepper
- 3 cups sliced carrots
- 1-2 cups sliced celery
- 16 oz egg noodles
Instructions
