Corn and Black Bean Salsa Recipe

I love chips and salsa. Probably way too much if we’re being honest. And this recipe clearly does not help my salsa addiction. This corn and black bean salsa is packed with flavor and is so filling. My kids also absolutely LOVE this recipe. I have a little guy who is super picky about vegetables (tomatoes mostly) and he will down a bowl of this corn salsa instantly. It’s versatile and can also be used as an appetizer or even a side! However you choose to serve it, I think you’re going to love it! Be sure to add it to your summer recipe list!

What Ingredients Are in Corn Salsa?

  • Corn – I have used both canned corn and frozen corn before. Either works great. If you’re using frozen corn, make sure it is completely thawed.
  • Black Beans
  • Avocados – This just gives it a little creaminess. I love it.
  • Tomatoes – Grape tomatoes are my favorite for this because they are full of flavor and easy to cut but any tomatoes will do.
  • Zesty Italian Dressing – This is the dressing for the salsa. I have used many different brands and they have worked great, just make sure to get the Zesty Italian Dressing.
  • Cilantro (optional) – I have made this corn and black bean salsa many times with cilantro but my children are not huge fans of cilantro, so I usually leave it out. However, if you are a cilantro fan, toss in a tablespoon of freshly chopped cilantro for more flavor!

How to Make Corn and Black Bean Salsa

  1. Cut tomatoes and avocados into small bite sized pieces. Add to a large mixing bowl.
  2. Drain corn and add to mixing bowl.
  3. Next, drain and rinse black beans. Add to mixing bowl.
  4. Pour 1/2-1 cup Zesty Italian Dressing over top of the salsa.
  5. Mix until well incorporated.
  6. Serve with tortilla chips.
  7. Enjoy!

How to Store Corn and Black Bean Salsa

This corn and black bean salsa is the best as leftovers! The longer it sits in the fridge, the more flavorful it becomes. Store in an airtight container in the fridge for up to 3 days.

Ingredients

  • 14.75 oz can corn
  • 15 oz can black beans
  • 1 1/2 cups diced tomatoes
  • 2 avocados
  • 1 cup Zesty Italian Dressing
  • 1 tbsp fresh cilantro, chopped optional

Instructions

  • Cut tomatoes and avocados into small bite sized pieces. Add to a large mixing bowl.
  • Drain corn and add to mixing bowl.
