Lazy Lasagna Recipe

Lasagna is one of our all-time favorite recipes. But let’s be real, lasagna can take quite a bit of time to make and sometimes, I just don’t have that kind of time! And you know when you’re craving something but don’t have time to make it? That’s how I feel with lasagna. Most of the time lasagna sounds so good, but it’s not going to happen.

This recipe was made purely out of desperation and a strong craving for lasagna. I had bought a package of ravioli for a different recipe that never got made. The package was sitting in the fridge and needed to be used. My oldest son had said that he wanted lasagna, but it was one of those days and I just did not have the ambition nor the time to make lasagna. So, my wheels started turning and I thought, why couldn’t I do a quick (lazy) version of lasagna with the ravioli noodles?

Well, I’m so glad I had this little inspiration because this recipe is one of our very favorites. This lazy lasagna recipe cuts so much time off of the dinner prep yet is loaded with flavor and goodness. Plus, it has all the flavors and textures of normal lasagna – with half the work!

What Ingredients Are in Lazy Lasagna?

  • Ground Beef – As always, we use our own homegrown ground beef that is grass-finished and regeneratively raised. It’s delicious, lean and so good. Our ground beef is 90/10 and I never have to drain off a bunch of fat.
  • Refrigerated Ravioli Noodles – Because I wanted to simulate the flavors of normal lasagna, I use ravioli noodles that are filled with cheese. There are different types of ravioli noodles but my favorite to use for this recipe is the four cheese ravioli noodles.
  • Minced Garlic – I think any Italian dish needs a touch of garlic. Just a teaspoon of minced garlic brings in some bold flavor without being too overpowering.
  • Onion Powder – Onion powder adds some zest here.
  • Italian Seasoning – Adding in some Italian seasoning here brings all those rich flavors that we love in a traditional lasagna to the lazy lasagna recipe.
  • Parsley – Parsley is an herb that I love to put as a topping for Italian dishes. It adds in some balance to savory dishes. It also smells amazing.
  • Crushed Tomatoes – I’ve tried several different forms of tomato bases here and crushed tomatoes are the best option.
  • Mozzarella Cheese – Mozzarella cheese is one of my favorites to add to an Italian dishes. It melts easily and have a rich creamy flavor that compliments the other flavors in the recipe.
  • Parmesan Cheese – I like to use both mozzarella and parmesan cheese in this lazy lasagna recipe. Parmesan cheese has a very distinct, sharp taste that adds some rich flavor. I like to add just a little bit.
  • Salt & Pepper

Tools You’ll Need

Recipe for Lazy Lasagna

  1. Preheat oven to 350 degrees F.
  2. In a frying pan, add together ground beef, onion powder, minced garlic, Italian seasoning and salt and pepper. Cook until ground beef is completely cooked through.
  3. When ground beef is cooked through, add in crushed tomatoes and turn to low heat. Simmer for 3-5 minutes to allow flavors to blend.
  4. Spray a 9×13″ baking dish with cooking spray.
  5. Begin layering the lazy lasagna. Add 1 cup of the sauce mixture to the bottom of the pan and spread evenly.
  6. Sprinkle one cup of mozzarella cheese over top of the cheese and sauce mixture.
  7. Next, layer ravioli noodles over the sauce mixture.
  8. Pour the remaining sauce over top of the noodles and spread evenly.
  9. When fully assembled, sprinkle remaining mozzarella and parmesan cheese over the top.
  10. Garnish with parsley.
  11. Bake for 40-45 minutes until lazy lasagna is slightly golden brown on top and bubbly.
  12. Remove from oven and let sit for 5 minutes before serving.
  13. Enjoy!

Store and Freezing

Store this lazy lasagna in an airtight container in the refrigerator for up to 3 days. Leftovers can easily be reheated in the microwave!

If you would like to freeze this recipe, cover it tightly with plastic wrap and then a layer of aluminum foil. Store in the freezer for up to 3 months. To cook, add 1 hour to the cook time.
