Chicken Gnocchi Soup Recipe

I feel like I need to post this everywhere, but my 3-year-old just devoured 2 bowls of this. We’ve hit the picky toddler stage where he literally only wants to eat oranges and string cheese or candy. Every day at dinner he won’t even try his dinner. It’s killing me, but…I’m thinking this is going to be a new winner. This soup checks all the boxes. It’s easy, creamy, filled with chicken, veggies AND is a slow cooker recipe. Can I just tell you how much I love slow cooker recipes?

The best part of this recipe is that it doesn’t take all day to cook. You can throw this in during lunch and have dinner a few hours later. Being able to dump everything in, walk away, and come back to a cozy, homemade meal feels like a small parenting win. If you’re in the thick of picky eaters or just need something comforting and stress-free for dinner, this chicken gnocchi soup is one you’ll want on repeat.

What Ingredients Are in Chicken Gnocchi Soup?

  • Cooked Chicken – The best part of this recipe is that you can use whatever chicken you want for this. If you’re short on time, just use a rotisserie chicken. If all you have are chicken breasts in the freezer, thaw those babies out and cook them. (I have an easy recipe here on how to cook chicken effortlessly.)
  • Gnocchi Potato Pasta – My favorite noodles to use are the DeLallo Italian Ready to Use Gnocchi Noodles.
  • Chicken Broth – To enhance the flavor of this soup, I use chicken broth rather than just water.
  • Carrots – I sneak in some vegetables and carrots just make this soup sweet and delicious.
  • Celery – My kids HATE celery, but here is the secret. If you dice them super small, then add them to this soup, they don’t even know they’re in there.
  • Butter
  • Flour – To get that thick creamy soup, you are going to make this gravy. I know it sounds weird, but it’s so good. Just like making regular white gravy, you will add butter and flour to a saucepan, make a roux and then add in milk and heavy whipping cream. You will then add it to the soup and magic happens. I’ll explain more below.
  • Heavy Whipping Cream
  • Whole Milk – I am a huge advocate for using whole milk. The extra fat gives extra flavor.

Seasonings

  • Oregano
  • Onion Powder
  • Minced Garlic
  • Kosher Salt
  • Pepper

Slow Cooker Chicken and Gnocchi Soup Recipe

  1. Cut the chicken into small, bite-sized pieces and add to the slow cooker.
  2. Peel and dice the carrots into small pieces, then add to the slow cooker.
  3. Finely chop the celery and add to the slow cooker.
  4. Add the seasonings and chicken broth.
  5. Cover and cook on HIGH for 4 hours.
  6. About 30 minutes before serving, stir in the gnocchi and cover again.
  7. In a medium saucepan, melt the butter over medium heat. Whisk in the flour to form a roux. Once the roux turns a light golden color, slowly whisk in the milk.
  8. Cook, stirring constantly, until a thick gravy forms. Stir in the heavy whipping cream and continue cooking until the mixture thickens.
  9. Pour the gravy into the slow cooker and whisk until fully incorporated.
  10. Serve warm and enjoy!

Storage and Reheating

Storage:
Allow the chicken gnocchi soup to cool completely before storing. Transfer leftovers to an airtight container and refrigerate for up to 3–4 days. For best results, store promptly to maintain the creamy texture.

Reheating:
Reheat individual portions in a saucepan over medium-low heat, stirring frequently until warmed through. You can also reheat in the microwave in 30–60 second intervals, stirring between each, until hot. If the soup thickens during storage, add a splash of chicken broth or milk to loosen it before reheating.
