Slow Cooker Pork Carnitas Recipe
This recipe for slow cooker pork carnitas is perhaps one of my very favorite recipes I have made. Let me first start by saying, I love a good street taco. I could always go for a street taco. And in my efforts to satisfy this craving, I was able to recreate one of my very favorite foods ever.
Not only is this recipe absolutely delicious, but it is so simple! Like it almost feels like something this simple could not possibly be this good. But oh man, it sure is! Make this for Sunday dinner or for a busy weeknight dinner! Either way, it’s going to be amazing.

What Ingredients Are in Pork Carnitas?
- Pork Roast – I have used a variety of different pork roasts, and I have found that they are all just as good. You can use a boneless pork roast or a bone-in roast. Either way, it is more about how long you cook it rather than the type of pork roast.
- Garlic Powder – Street tacos have a lot of different flavors, so I wanted to add in some garlic powder to really bring some bold flavors to these carnitas.
- Onion Powder – My family doesn’t like onions so instead I use onion powder.
- Cumin – Cumin is a very popular seasoning in Mexican dishes. It has a very distinct, warm flavor to it, which compliments the other flavors in the carnitas.
- Oregano – Oregano has a very bold, potent flavor. I like to use it in my recipes in small amounts.
- Taco Seasoning – If you’re looking for a very flavorful, yet simple taco seasoning recipe, you can find mine here.
- Corn Tortillas – You can use either white or yellow corn tortillas for this recipe.
- Olive Oil or Canola Oil
- Toppings – I love all the toppings on my street tacos! Avocados, tomatoes, shredded cheese, and especially my homemade cilantro ranch dressing. You can find that recipe here.

How to Make Pork Carnitas
- Add half cup of water to the bottom of a slow cooker.
- Mix together salt, pepper, cumin, garlic powder, onion powder and oregano to make a rub.
- Generously coat the pork roast on all sides then place the pork roast in the slow cooker.
- Cover and cook on low for 8-10 hours or on high for 4-6 hours until pork falls off the bone and is very tender.
- After 8-10 hours, remove pork from slow cooker and shred. Set aside.
- Heat 2-3 tablespoons oil in a frying pan.
- Add shredded pork to frying pan and sprinkle taco seasoning over top. Mix well and cook until pork is crispy. Remove from heat and set aside.
- Heat a generous amount of oil in a frying pan and place desired amount of corn tortillas in the frying pan. Cook corn tortillas on both sides for 1-2 minutes until slightly golden brown and crispy. Remove from heat and set aside.
- Assemble carnitas with corn tortillas and fried pork.
- Top with favorite toppings and serve.

How to Store Slow Cooker Pork Carnitas
Store the pork in an airtight container in the refrigerator for up to 3 days. Leftovers can easily be assembled to have this meal as many times as you want during the week!
