I know there are millions of recipes swarming the internet for ground beef casserole recipes. I myself have been there too. But let me save you the trouble and just share this here ground beef and potato casserole recipe.

Let me just start by saying, I love a good casserole recipe. Something that doesn’t take a lot of time but also turns out to be one of those casseroles that everyone in your church wants you to share with them. This is the one. I had a moment where I wanted to just have au gratin potatoes for dinner but also knew that I needed to add some protein to dinner, so this ground beef and potato casserole was created.

The rancher and the tiny cowboys went wild for this recipe. And I went wild because I finally had created a casserole that my family didn’t snub their noses at.

What Ingredients Are in Ground Beef and Potato Casserole?

  • Ground Beef – As always, we use our own homegrown ground beef that is grass-finished and regeneratively raised. It’s delicious, lean and so good. Our ground beef is 90/10 and I never have to drain off a bunch of fat.
  • Red Potatoes – My personal preference for this recipe is red potatoes but you may use any potato that you would like.
  • Minced Garlic – Minced garlic adds a subtle sweetness to the ground beef and potato casserole that is really yummy.
  • Onion Powder – Adding in onion powder also really helps to bring in some added flavor instead of just being bland.
  • Seasoned Salt – I’m a fan of using seasoned salt! It makes such a difference in the flavor!
  • Worcestershire Sauce – Ok here me out here, I think Worcestershire sauce is so good at making ground beef taste beefier? Is that even a thing? Well, I’m saying it is. I love to add Worcestershire sauce to enhance the beef flavor in recipes.
  • Beef Broth – This is another way that I add different depths of flavor here. Once the ground beef is completely cooked, I like to simmer it in some beef broth to really pull all the flavors together. Once the liquid has cooked out of the ground beef, but the ground beef is still moist, that is when I remove it from the pan.

  • Butter – I use regular salted butter here.
  • All Purpose Flour
  • Whole Milk – I always keep whole milk on hand for gravies and sauces. Because of the fat content in whole milk, it makes it so much yummier!
  • Kosher Salt
  • Shredded Cheddar Cheese – Ok listen, I will die on this hill… Hand shred your cheese. It is yummier, it melts better and also just has so much more flavor!
  • Pepper

Recipe for Ground Beef and Potato Casserole

  1. Preheat oven to 400 degrees F.
  2. Wrap potatoes in aluminum foil (if desired) and poke with a fork a few times.
  3. Bake potatoes for 45-55 minutes.
  4. Remove from oven, unwrap and let cool.
  5. In a frying pan, combine ground beef and seasonings.
  6. Mix well and cook until beef is completely cooked through.
  7. When beef is fully cooked, add in beef broth and simmer until all the moisture has evaporated. Remove from heat and set aside.
  8. In a saucepan, melt butter over medium high heat.
  9. Add in flour and whisk well creating a roux. Continue whisking and cooking until the roux turns golden brown.
  10. Slowly add in milk and whisk well. Stir frequently until the sauce begins the thicken to desired consistency.
  11. Remove from heat and add in shredded cheese. Stir until cheese is melted.
  12. Assemble the casserole by first spraying a 9×13″ baking pan generously with cooking spray.
  13. Cut the potatoes into slices (and remove skins if desired) and layer half the potatoes in the bottom of the baking pan.
  14. Next, layer half the ground beef mixture over top of the potatoes.
  15. Repeat the process until all potatoes and ground beef have been layered evenly in the baking pan.
  16. Pour the cheese sauce over top of the ground beef and potato mixture and spread evenly.
  17. Bake for 15-20 minutes at 400 degrees until the casserole is golden brown on top and bubbly.
  18. Remove from heat and enjoy!

  • Store in an airtight container in the refrigerator for up to 3 days. Leftovers can easily be reheated in the microwave!
