Italian Sausage Tortellini Soup Recipe
Being the ranch wife that I am, I have many different jobs on the ranch. And one of those jobs just happens to be doing all the ranch expenses. It literally squashes my soul. I keep trying to get fired, but my husband won’t seem to fire me from this job. After one very long day of doing the ranch expenses, I broke away to make some dinner. One of my very favorite things to do is create new recipes. It feeds my creative side and after being chained to my desk doing finances, I needed the break.
I had originally grabbed some tortellini for a different recipe, but a cold front came through and I felt like we needed a new warm soup recipe. It was then that this recipe was created. This creamy Italian sausage tortellini soup is the perfect family-friendly dinner that even picky eaters will enjoy. Not only is it delicious, but it’s also quick and simple and perfect for weeknight dinners.

What Ingredients Are in Creamy Italian Sausage Soup?
- Italian Sausage – We love a hearty soup, so I added 2 lbs. of sausage to this recipe. My favorite brand of Italian sausage is the Jimmy Deans Italian sausage. I love its flavor and it’s not too spicy for my kids.
- Diced Tomatoes – I use regular diced tomatoes, but if you would like to add a little kick to the soup, you can use fire roasted diced tomatoes. My little friends can’t handle spicy things, so we stick to a milder version of this soup.
- Chicken Broth – This is going to be the base of your soup.
- Celery – Celery adds the best flavor in soups. However, my kids do not like celery, so the key here is to dice the celery very small so that they can’t taste it.
- Tortellini Noodles – I buy the refrigerated noodles rather than the frozen ones. I’m sure the frozen tortellini noodles would be fine too.
- Parmesan Cheese – I love parmesan cheese in soups. It adds such a yummy flavor and, in this soup, it pairs so well with the sausage and tortellini without being overpowering.
- Heavy Whipping Cream – I am a huge fan of heavy whipping cream. I use it in so many different recipes. It just adds the best, creamiest texture to soups!
- Optional – This soup has a broth base so it will not be a thick soup. However, if you want to thicken up this soup, you can mix together 1/4 cup water and 2 tablespoons of cornstarch to make a slurry. When the soup is done, add in the slurry and mix until the soup thickens.

Recipe for Creamy Italian Sausage Soup
- In a large stock pot, cook Italian sausage until completely cooked through, drain and set aside.
- Dice celery into small pieces and add to the same stock pot.
- Add in minced garlic and cook over medium heat for 1-2 minutes with celery, stirring frequently to prevent burning.
- Add chicken broth, diced tomatoes and seasonings to stock pot and bring to a boil.
- When the soup begins to boil, reduce the heat to medium low and add in sausage and tortellini noodles.
- Cook for about 3 minutes until tortellini is soft.
- Turn off heat and add in parmesan cheese and heavy whipping cream. Mix until well incorporated.
- Spoon soup into bowls and garnish with parmesan cheese.
- Enjoy!

How to Make This Recipe Gluten Free
To make this recipe gluten free, you will want to substitute regular tortellini noodles for gluten free noodles. I have yet to find some gluten free tortellini noodles, so if you find some you like, make sure to let me know!
Storage and Reheating
The best part about this recipe, is that it makes great leftovers! Store it in an airtight container in the fridge for up to 5 days. To reheat, spoon desired amount into a bowl and microwave or reheat on the stove in a saucepan.
