Gluten Free Beef and Cheese Taquitos Recipe

If you’re looking for a quick dinner option that you can throw together in less than 10 minutes, this recipe is for you! Not only are these beef taquitos super easy to make, but they are so versatile as well! We’ve served them as appetizers, snacks and dinner too! They can be baked or fried. Sometimes I bake them when I’m feeding a crowd, but most of the time, I pop them in the air fryer and dinner is done in less than 15 minutes. And did I mention, they’re so yummy too?

The Cowboys’ Rating: 9.5/10

Every time I make a new recipe, I have my family rate the recipe out of 10. By the time, these recipes make the blog, they’ve been tried and tested by some of my hardest tiny critics!

Ingredients for Homemade Gluten Free Beef Taquitos

  • Ground Beef – As always, we use our own homegrown ground beef that is grass-finished and regeneratively raised. It’s delicious, lean and so good. Our ground beef is 90/10 so I never have to drain off a bunch of fat.
  • Salsa – I like to add salsa because it adds more flavor without having to add a bunch of ingredients. It also makes the beef more moist. I use a homemade salsa blend that I make but any salsa will do.
  • Onion Powder – If you like onions, you can add onions to your ground beef, but at my house, I have a bunch of people who despise onions, so I use onion powder in my recipes instead.
  • Minced Garlic – By now you should know, I love garlic. So, I usually add it to most of my recipes. A little garlic adds some subtle flavor that is so good.
  • Gluten Free Taco Seasoning – If you’re looking for an easy and delicious gluten free homemade taco seasoning blend, you can find my homemade taco seasoning recipe here. This is what I use for any recipe that calls for taco seasoning.
  • Mexican Cheese Blend – I use a shredded Mexican cheese blend for these delicious homemade beef taquitos. This blend is my favorite for beef taquitos, but I’ve used regular cheddar cheese before as well. (I mean any cheese is yummy right?)
  • Salt
  • Pepper
  • Gluten Free Tortillas – Here are three different types of gluten-free tortillas that you can use for this recipe. It is just based off personal preference, but these are my favorite:

Tools You’ll Need

How to Make Gluten Free Beef Taquitos

  1. Preheat oven to 375 degrees F.
  2. In a frying pan, add together ground beef and seasonings.
  3. Cook ground beef until completely cooked through.
  4. When ground beef is done, reduce heat to medium low and add in salsa. Simmer for 1-2 minutes then remove from heat.
  5. Remove tortilla shells from the package and lay flat on the countertop.
  6. Place a few spoonfuls of the beef mixture in the center of the flour tortilla then sprinkle with desired amount of shredded cheese.
  7. Roll the tortilla around the beef mixture making sure to leave about 1″ from the edge free. (This keeps the beef and cheese from spilling out while baking.)
  8. Place the taquitos on a baking sheet with the seam side down so that the taquito remains closed during baking.
  9. Repeat this process for the remaining taquitos.
  10. Bake the taquitos for 10-15 minutes until golden brown on top. (When baking pay close attention to the edges. The edges will cook faster than the center and can burn quickly. If this starts to happen, place a piece of aluminum foil over the top of the taquitos and continue baking for the remainder of the time.)
  11. Remove from heat.
  12. Top with favorite toppings and serve.
  13. Enjoy!

Storage and Freezing

  • Refrigerator – Storing homemade beef taquitos is simple. Store them in an airtight container in the fridge for 3-5 days.
  • Freezing – These are the best easy freezer meal you can find. When I make this recipe, I double the recipe just so I can have a quick freezer meal. Instead of baking the excess taquitos, I freeze them.
  • Place the taquitos in a freezer Ziploc bag and freeze. When you want to reheat them, remove the desired amount of chicken taquitos from the bag and place on a baking sheet. Bake at 375 degrees for approximately 35-45 minutes or until completely warmed through. When baking if the edges begin to overbrown, place a piece of aluminum foil over the top of the taquitos and continue baking for the remainder of the time.
  • Reheating – I have found that the best way to reheat these bee taquitos is to bake them again or to place them in the air fryer for 5-6 minutes at 375 degrees F. This way, they maintain flavor and won’t be soggy leftovers. Bake them for approximately 8-10 minutes at 375 degrees F for best results.
