This lasagna soup could not be easier or more delicious. Slow cooked all day to perfection with a blend of beef, cheese and noodles, it’s a weeknight family favorite for those cold winter months.

Let’s talk soup for a minute. My husband is not a huge fan of soup unless it’s one heck of a hearty soup. I don’t blame him either. He’s a rancher and works HARD every day. So, coming home to a measly bowl of soup after a long, hard day is a bit of a letdown. But…not this soup. This soup is so flipping good and it fills you up. It’s all the goodness of traditional lasagna but in a hearty soup version that takes a fraction of the time. I pair this with a side salad and some garlic bread, and I look like I’m the ranch version of Martha Stewart.

What’s In Lasagna Soup?
- Ground Beef – I always use our homegrown grass finished ground beef. Not only is it packed with nutrients and so dang good, it’s lean (90/10) and I never have to drain it. I always recommend getting beef from a great local source.
- Diced Tomatoes – I use basic diced tomatoes. Pretty simple here.
- Chicken Broth – This is going to be the base of your soup.
- Tomato Paste – You want a robust tomato flavor in this lasagna soup recipe, so I like to add some tomato paste to add depth and to also thicken the soup.
- Italian Seasoning – I’ve found that there are many different variations of Italian seasoning. The dried herb blend can vary from recipe to recipe. This is my favorite seasoning blend here.
- Garlic Powder – garlic powder is dehydrated garlic that has been ground into powder. Adding garlic powder adds depth and flavor to the homemade lasagna soup recipe.
- Onion Powder – onion powder is also a dehydrated form that has been ground into powder. Because onions give a robust flavor in all different dishes, I like to add onion powder to this lasagna soup recipe.
- Kosher Salt – I like to use kosher salt often in cooking because of its flavor. Unlike regular table salt, kosher salt is not iodized and it’s very versatile. The texture is large, light flakes that don’t dissolve immediately. I feel like it gives my dishes a richer flavor.
- Pepper – I always add a dash of pepper in all my dinner recipes.
- Lasagna Noodles – Obviously you can’t have lasagna soup without lasagna noodles. Any lasagna noodles will do, but these are the ones that I prefer here. They give the homemade lasagna soup a little texture.
- Parmesan Cheese – Parmesan cheese has a distinct, savory flavor that is delicious in this recipe.
- Mozzarella Cheese – Lasagna soup couldn’t be complete without the richness and creaminess of mozzarella cheese.
- Ricotta Cheese – No lasagna is complete without the addition of ricotta cheese. Ricotta cheese is an incredibly soft, milky flavored cheese with a grainy texture. It’s thick like sour cream and is great to add to this dish in a small amount so it doesn’t overpower the rest of the flavors.

How to Make Slow Cooker Lasagna Soup
- In a frying pan, cook ground beef until completely cooked through.
- When done, add ground beef to slow cooker along with seasonings, chicken broth, diced tomatoes, and tomato paste and mix well.
- Cover and cook on low for 8 hours or on high for 4-6 hours.
- 30-45 minutes before serving, break up lasagna noodles and add to slow cooker.
- Cover and allow to cook for an additional 30-45 minutes until lasagna noodles are soft.
- When noodles are soft, add in parmesan and mozzarella cheese to lasagna soup and mix until cheese has melted and is well incorporated.
- Serve and top with a dollop of ricotta cheese.

Ingredients
- 1 lb ground beef
- 2 14 oz cans chicken broth
- 2 14 oz cans diced tomatoes
- 1 tsp onion powder
- 2 tsp minced garlic
- 1/2 tbsp Italian seasoning
- 1 tsp kosher salt
- 1/4 tsp pepper
- 3 tbsp tomato paste
- 8 oz dry lasagna noodles
- 1/2 cup shredded parmesan cheese
- 1 1/4 cup shredded mozzarella cheese
- 8 oz. ricotta cheese
Instructions
